Why would a new website get me more calls?

Because most local service websites lose the visitor rather than convert them. They load slowly on a phone, bury the number, do not say which areas are covered, and show no evidence of real work. Fixing those four things usually changes the number of calls more than any clever design ever does.

Can I not just use Wix or an AI website builder?

You can, and it will look fine. What you will not get is the local keyword research, the page structure Google needs, the Business Profile work, the technical setup, or anybody watching Search Console. A tidy site that nobody finds is a business card, not a lead source.

How many pages do I get?

As many as the business needs, normally a home page, a page per main service, area pages for the places you work, a proof or gallery page, and contact. Pages exist because a customer searches for that thing, not to hit a number.
